Lazy high protein dish - tofu in tomato and parsley sauce

This is one of my ready-in-15 dinners.......yes, you can really make a tasty healthy dish in 15 minutes!

1 block of firm tofu

1c chickpeas

1c passata

1/2c water

1 bunch flat parsley

1/2t garlic salt

1/2t onion salt

1/2t stock powder

Salt, to taste (you may not need this as you have added the garlic and onion salt)

A pinch of pepper (I prefer white pepper)

2 handfuls baby spinach

Put the tofu in a large frying pan (without the heat on)

Mush it roughly with a fork

Blend the chickpeas, passata, water, parsley, garlic and onion salt and stock powder

Pour this in the pan and put the heat on high

Once the food is bubbling bring it down to a medium heat for 5 minutes and taste to check if any seasoning is needed. 

Turn off the heat, add the spinach mixing it in to the dish so that it wilts. Serve....it's that easy!!!!
