Ridiculously easy one pot sweeet potato dahl

This is a dish I often make at home when I can't be bothered to cook. It is so easy and healthy. It contains a variety of nutrition so it can be a whole meal and it freezes very well, meaning it is perfect for batch freezing. If you haven't tried batch freezing yet you really must, it's perfect for those with little time to cook. You simply make big batches of food and then freeze them in individual portions which can be defrosted as and when you need them.

1 cup / 200g red split lentils

1.5 litres water

2 teaspoons stock powder

1 medium sweet potato

1 courgette

1 teaspoon ground turmeric

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

Salt, to taste 

 

Add all the ingredients to a large saucepan. Bring to the boil then simmer until the lentils and sweet potato break apart, thickening the dahl. This should take around 30 to 40 minutes.
