1 PAN DISH - Red rice with sun dried tomatoes and home grown courgettes
On a rainy day like today who wants to cook? I'd rather stay under a blanket, laden with cats, tea in one hand, book in the other. So I just popped all of this into a pan, added stock to cover and let it simmer away.....done.
1 large onion, sliced
2 large courgettes, cut into half moons
1/2 cup red carmargue rice
The leaves from 3 or 4 cavolo nero stalks
3 garlic cloves, sliced
5 sundried tomatoes, sliced
1 tablespoon stock powder
Salt, to taste
Add all of the ingredients to your pan
Pour in enough water so the ingredients are just covered
Bring to the boil on a high heat then reduce to a simmer
Add a little hot water if the pan dries out too much (I keep a full kettle on stand by for dishes like this)
Cook for around 30-40 minutes until the rice is cooked through
Serve....it's that simple!!!
