1 PAN DISH - Thai-ish noodles with tofu - complete protein!!

This is a great dish for any season, perfect in the winter and perfect in the summer. Not many dishes can do that but Thai inspired dishes can! This is another 1 pot dish so literally you can just 'set it and let it'.........meaning that you can get it simmering and go do something else.....how easy is that?!

A handful of thai basil

2 handfuls of kale leaves

1/4 cabbage, roughly sliced

4 garlic, sliced

1 large onion, sliced

A handful of brown rice flat noodles

1 block tofu, cut into cubes

1T stock powder

Salt

1t ground ginger

A dash of cayenne pepper

1 can coconut milk plus 2 cans of water

Add all of the ingredients to your pan

Bring to the boil on a high heat then reduce to a simmer

Add a little hot water if the pan dries out too much (I keep a full kettle on stand by for dishes like this)

Cook for around 10-15 minutes until the rice noodles are cooked through

Serve....it's that simple!!!
