12 holiday dishes - no.1 Kibbeh

This is one of my favourite dishes and a great alternative for a Christmas eve or Boxing day buffet.


4 large sweet potatoes

2 cups cooked white quinoa

1/2 cup gluten free breadcrumbs (I use Clearspring)


1t chilli flakes


Olive oil

1 onion , finely chopped

90g spinach

25g pistachios, roughly chopped

35g sultanas

2t sumac


Cut the sweet potato in half

Bake at 220c until soft in the middle

Scoop out the insides, you should have around 500g

Mix this with the quinoa, breadcrumbs, salt and chilli flakes

In a frying pan heat a splash of oil, cook the onion until very soft

Add the spinach and cover the pan

Cook for a few minutes until the spinach has wilted

Add the pistachios, sultanas and sumac

Put a little oil on a baking tray

Take a spoonful of the potato mixture in you hand, flatten, add a small amount of the spinach mixture

Fold the potato around the spinach, sealing well

Do this will all the mixture, putting the kibbeh onto the baking tray

Bake at 200c for 45-60 minutes, turning over so they brown on all sides
