Almond cookies

1 cup cashew nuts

1/4 cup quinoa flakes

1/2 cup ground almond

1/4 teaspoon bicarbonate of soda

2-3 teaspoons coconut palm sugar

2 tablespoons coconut oil

1 tablespoon carob molasses

preheat the oven to 220c

grind the cashews in the chopper attachment of a hand blender or in a blender

put the cashews into a large mixing bowl

add 2 teaspoons of the coconut sugar, quinoa flakes, ground almond and bicarbonate of soda and mix well

heat the coconut oil till melted and pour into the dry mixture

add the carob molasses and vanilla essence

mix everything together. at this point taste the batter to see if you need to add any more sugar. if you do add it a little at a time.

form into 8 small balls by pressing between your cupped hands and rolling, then press them so they are round but flattened a little

put onto a baking sheet and bake for about 20 minutes. they will go a dark brown colour
