Avocado salad

ingredients for one person

  • 1 avocado cut into chunks

  • 2 handfuls mini plum tomatoes, cut into quarters

  • 1/2 red onion finely sliced

  • 1 handful coriander leaf

  • 1 handful flat parsley

  • juice of 1/2 lemon

  • 1 tablespoon extra virgin olive oil

  • salt to taste



  • mix the avocado, red onion and tomatoes in a bowl

  • in the chopper attachment of a hand blender blend the herbs until they are fine

  • if you do not have a chopper chop them finely by hand

  • add the oil, juice and salt to the herbs

  • pour this over the salad and allow to sit for 5 minutes

  • mix again and serve
