Avocado salad

When you're bored of guacamole try this recipe…..you can also try adding finely chopped broccoli. It’s a great way to sneak broccoli into a kids diet and consuming it raw gives you tons of calcium.

Ingredients for one person

1 avocado cut into chunks

2 handfuls mini plum tomatoes, cut into quarters

1/2 red onion finely sliced

1 handful coriander leaf

1 handful flat parsley

Juice of 1/2 lemon

1 tablespoon extra virgin olive oil

Salt to taste


Mix the avocado, red onion and tomatoes in a bowl

In the chopper attachment of a hand blender blend the herbs until they are fine

If you do not have a chopper chop them finely by hand

Add the oil, juice and salt to the herbs

Pour this over the salad and allow to sit for 5 minutes

Mix again and serve
