Broccoli with white miso

White miso is a wonderfully versatile ingredient. It has a natural sweetness, a great texture for sauces and is highly nutritious. If you want to warm this sauce do so gently as overheating it can destroy the gut friendly probiotics in the miso.

This recipe makes 4 small portions

1 tablespoon white miso

1 tablespoon tamari

1 garlic clove, grated

1 inch of ginger root, grated

1 tablespoon sesame seeds

1 large head of broccoli cut into florets

1 teaspoon salt

1/4 cup water

Using a blender to combine the miso, tamari, garlic and ginger

Toast sesame seeds in a dry frying pan on a medium heat

In a large frying pan heat the oil over a high heat

When hot add the broccoli, fry for a few minutes then add the water and salt and put the lid on

Cook till just tender, test with a fork

Put the broccoli into a serving bowl, top with the sauce and seeds
