The secret to this mash is to use jars of beans rather than tins. The beans in jars are fluffier and drier. If you use tinned beans this recipe will be more like hummus than mash. Butterbean mash is a great swap for potato mash, kids can’t tell the difference!!!
This recipe makes 4 small portions
2 jars (not tins) butterbeans
½ - 1 garlic clove (depending on personal preference)
Juice of 1 lemon
1 teaspoon ground cumin
1 teaspoon light tahini
4 spring onion finely chopped
1 bunch chives, finely chopped
Blend (using a hand blender) the beans, garlic, lemon juice, cumin and tahini till smooth. Add salt to taste.
Warm in through in a pan on a low heat.
Pour into a serving dish
Scatter with spring onion and chives
