Candy beetroot yuzu salad
This is a quick salad that has loads of flavour and texture. You really do need candy or golden beetroot for this recipe as red beetroot will stain the cucumber to a very unappealing colour! Fortunately the brightly coloured beetroot is available from many independent fruit and veg shops now.
2 mini cucumbers
650g candy beetroot
1T sesame seeds
1T extra virgin olive oil
Slice the cucumber as finely as you can. If you have a mandolin you can use that but, as always, be very careful with it!
Peel the beetroot, finely slice it, stack those slices and cut into matchsticks. Put the cucumber and beetroot into a bowl.
Toast the sesame seeds in a dry frying pan on a medium heat until they are golden.
Mix the yuzu, mirin, tamari, oil and tabasco.......I haven't stated how much tabasco to add as that is really up to you, some of us like it SPICY and some of us not at all.
Add the dressing and seeds to the salad and mix well, serve straight away.
