Fruit ice creams

This was the finale to a month of me literally drowning in dairy free frozen delights by creating 30 nice creams in 30 days. It’s a tough job but I’ll do it just for you guys😉In typical Chef fashion (ie. pretentious) the last 3 are shown as a trio🙄AND sitting happily within griddled flat peach! It’s like an ice cream sandwich but with shedloads of compassion for your body, health, the planet and of course all those animals. Eat and be smug in your purity😉
All nice creams are a mixture of stewed fruit and cashew. The fruit lightens the cashew making it not so dense and filling. And the fruit is sweet enough so you don’t need to add any syrup. The flavours are -
Salted caramel apple with rose
Pear, cardamom and cinnamon
Vanilla peach with buckwheat

3 doughnut peaches, split in half, stone removed and cooked on a griddle pan

Salted caramel apple with rose

1 apple, peeled, cored and stewed

1/3 cup cashews, soaked in warm water for 30 minutes

A few drops of salted caramel flavouring

A few dried rose petals

Simply blend the apple, cashews and flavouring till smooth, put this into a round mould and freeze for a few hours. Remove from the mould and place in the peach then roll in the petals.

Pear, cardamom and cinnamon

1 pear, peeled, cored and stewed

1/3 cup cashews, soaked in warm water for 30 minutes

A few drops of cardamom spicedrops or a pinch of ground cardamom

A pinch of ground cinnamon

Ground hazelnut

Simply blend the pear, cashews, cardamom and cinnamon till smooth, put this into a round mould and freeze for a few hours. Remove from the mould and place in the peach then roll in the ground hazelnut.

Vanilla peach with buckwheat

1 peach, peeled, cored and stewed

1/3 cup cashews, soaked in warm water for 30 minutes

A few drops of vanilla essence

Raw buckwheat

Simply blend the peach, cashews and vanilla essence till smooth, put this into a round mould and freeze for a few hours. Remove from the mould and place in the peach then roll in the buckwheat.
