Goji Chia Chai Pudding

This is another great overnight breakfast recipe (see my overnight oats recipe too). Making breakfast the night before is a way to future proof yourself. Most of us are sleepy in the morning and so eat whatever is the most convenient but that can also be food that is boring and unhealthy. With your overnight breakfast waiting for you in the fridge you don’t need to do anything more than grab it and eat!

This recipe makes 4 portions

2 cups almond milk

2 bananas

1/2 cup cashew nuts

2/3 teaspoon ground cinnamon

2/3 teaspoon ground ginger

1 pinch ground cardamom

1/4 star anise

5T chia seeds

1 handful goji berries

 

 

Blend the almond milk, banana, cashews and spices

 

Mix the chia seeds and goji berries into the almond milk mixture

Pour into serving glasses or small bowls

Chill for at least 8 hours
