Raw pad thai

This is barely a recipe! It is so simple, it’s just a matter of throwing a few ingredients together. This is perfect for a summers day when it’s too hot to cook.

This recipe makes 1 portion

1 pack mini corn, sliced lengthwise

1 pack mangetout, sliced lengthwise

1/2 red pepper, thinly sliced

1 carrot grated

1 avocado cut into chunks

1 large handful beansprouts

Juice of 1 lime

1 small garlic clove, grated

1 small piece of ginger, grated

2 teaspoons tamari

1 handful cashew nuts

Simply put all the ingredients, except the cashews, in a large mixing bowl and massage for five minutes. Add the cashews, mix and serve. Eat straight away.
