Supersimple sprout salad

Sprouts are both easy and cheap to grow. They are packed with protein and can make any salad look more interesting and more attractive. You don’t need any special equipment, an old jar, a teatowel and an elastic band will suffice!

This recipe makes 4 small portions

100g white quinoa

2 teaspoon stock powder

1 gem lettuce

100g baby spinach

1 avocado

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon sumac

Juice of half a lime

1/2 tablespoon extra virgin olive oil

1 handful of your favourite sprouts

1 handful pumpkin seeds

Boil the quinoa with the stock powder and twice the amount of water to quinoa

Cook till very soft then put into a large container to cool down

Once the quinoa has cooled roughly chop the lettuce, spinach and avocado

Add these to the quinoa with the spices, oil, sprouts, seeds and lime juice

Add salt to taste, mix well and serve
