Supersimple sprout salad

100g white quinoa

1 gem lettuce

100g baby spinach

1 avocado

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon sumac

Juice of half a lime

1/2 tablespoon extra virgin olive oil

1 handful of your favourite sprouts

1 handful pumpkin seeds



Boil the quinoa in stock, twice the amount of liquid to quinoa

Cook till very soft, put into a large container to cool

Once the quinoa has cooled roughly chop the lettuce, spinach and avocado

Add these to the quinoa with the spices, oil, sprouts, seeds and lime juice

Add salt to taste
