Sweet potato pie ice cream

This is my fun take on a thanksgiving classic. A frozen version that is so quick and easy to make! It can be made well in advance and then wait in the freezer while you make everything else.


1 sweet potato, steamed

1/2 cup cashews, soaked in warm water for 30 minutes

Rice or date syrup, to taste

Oat cakes

Blend the sweet potato with the cashews and syrup till smooth

Put it into a rectangular tupaware and freeze

To make the crumble simply crush a few oatcakes and mix with a little syrup

To serve remove the ice cream from the freezer and allow to thaw for 5 minutes, cut it on the diagonal

Scatter some of the crumble onto the plate, add the ice cream slice and then top with the remaining crumble
