Tamari baked aubergine
This is a great dish for when you want a savoury heavier element to a meal. The aubergine is so silky smooth as long as you cook it for enough time. Serve it with some brown sushi rice and seaweed sprinkles from Clearspring.
This recipe makes enough for 4 people3 aubergine
1 cup tamari
1/2 cup mirin
1 cup sake
1 tablespoon sesame seeds
Preheat your oven to 200c
Slice the aubergine into 1 inch thick rounds
Put the aubergine into a baking dish
Mix the tamari, mirin and sake and pour over the aubergine
Cover with foil, bake for 15 minutes then flip the aubergine pieces over
Toast the sesame seeds in a dry frying pan on a medium heat
Bake the aubergine for another 15 minutes or until they are completely soft
Remove the aubergine from the baking dish, pour a little of the marinade over, sprinkle with the seeds and serve.
