Trio of frozen crumbles

This collection of droolsome nice cream demi God’s are the nuts! Quite literally😆 All use nuts and have an instant crumble top. ‘What’s an instant crumble top?’ I hear you cry. Well it’s a mix of broken up @nairnsoatcakes mixed with nuts, seeds, coconut sugar and / or syrup. Add it to the mould first and you have this gloriously crunchy top that is more mouthwatering than a Pinot on a hot day. Then make and add your nice cream, these are all frozen banana based but with different flavourings -
Ferrero Roche
Walnut and dried cherry
Peanut butter and cinnamon -
All nuts. All as different to each other as Alvin, Simon and Theodore. Or Morten, Mags and Paul. Please note that ALL of my cultural references are from the 80s and 90s so if you don’t know who Nanook is I’m afraid most of my posts will leave you confused.

Ferrero roche

For the topping

A square of dark chocolate, roughly chopped

1 tablespoon ground hazelnut

A little rice syrup

1 teaspoon water

Mix these ingredients together and put it into the base of the mould

1/3 cup cashews, soaked in warm water for 30 minutes

1 tablespoon ground hazelnuts

Rice syrup, to taste

1 teaspoon raw cacao

Blend the cashews, hazelnuts, cacao and syrup till smooth. Add to the mould. Freeze for a few hours until set. Remove from the mould and serve with a scattering of cacao nibs.

Walnut and dried cherry

For the topping

Ground walnuts

A few dried cherries

A little rice syrup

1 teaspoon water

Mix these ingredients together and put it into the base of the mould

1/3 cup cashews, soaked in warm water for 30 minutes

1 tablespoon ground walnuts

A few dried cherries

Rice syrup, to taste

Blend the cashews, walnuts, cherries and syrup till smooth. Add to the mould. Freeze for a few hours until set. Remove from the mould and serve with a scattering of walnuts.

Peanut butter and cinnamon

For the topping

2 oatcakes, crushed

A little rice or date syrup

A pinch of ground cinnamon

1/2 teaspoon white poppy seeds (optional)

Mix these ingredients together and put it into the base of the mould

1/3 cup cashews, soaked in warm water for 30 minutes

1 tablespoon peanut butter

Rice syrup, to taste

Blend the cashews, peanut butter and syrup till smooth. Add to the mould. Freeze for a few hours until set. Remove from the mould and serve with a scattering of poppy seeds.
