Veggie patch burgers with sun dried tomatoes
One of the beautiful things about having an organic veggie box is that it forces me to use veggies I would not have immediately chosen. Turnip is one of those veggies......I get my veggie box from Field2Fork organics and in this dish I use British grown quinoa from Hodmedods.
4 turnips cut in half
A handful of baby spinach leaves
A handful rocket leaves
8 large sun dried tomatoes
2 handfuls of white quinoa
2t stock powder
Salt and white pepper, to taste
Heat your oven to 220c, place the turnip on a baking tray and cover with foil. Bake for 25-30 minutes until hey are completely soft, scatter some salt on them.
Cook the quinoa in 1/2 a cup of water, the stock and salt and pepper. Bring to the boil, reduce to a simmer with the lid on. The quinoa should take 10-15 minutes to cook.
Assemble your burgers on a plate with the bottom half of the turnip, the greens, the quinoa, the tomatoes and the other half of the turnip on top.
