Chantal Di Donato, Co-Founder
Chantal is a Certified Holistic Health Coach, Yoga Teacher, Author, Nutritional Advisor and founder of the upcoming Eco retreat : Eco Dharma in Portugal.
She graduated from the Institute for Integrative Nutrition in NYC, and Aditya Yoga School in London and continues to learn and study as an eternal student!
Her journey started eighteen years ago after a sixteen year destructive relationship with food culminating in a two year battle with anorexia. Health issues forced her to face her eating issues and turn her life around. In her healing process she became vegan after listening to a lecture by Dr Neal Barnard. During the period her health was improving Chantal began a career as a yoga teacher. This symbiotic pairing resulted in kindness becoming the mission statement of her life: kindness to self, to all living beings and to the planet.
Chantal believes that medicine is on our plates. She implements both nutrition and lifestyle in her coaching practice, believing that our earth is our healing force - working with nature is key . A healthy vegan, food activist and author of the Live Lean Health Plan, The Live Lean Detox Plan, Innocently Sweet and the Live Lean inspirational Cards, contributor to OM YOGA MAGAZINE and speaker at several events and workshops.
“Sustainability blossoms with every choice we make. Choices are the translation of our consciousness’ vibrations”
Chef Day Radley
Chef Day is an international professional chef, cooking teacher and food writer. In the last decade she has worked as Head Chef in three continents and, in recent years, as a private chef for a select few clients. Day regularly writes for UK & International Food magazines and has been featured on Sky News.
Day has been vegan for 24 years and a pro chef for almost a decade. She became vegan at age 17 and started to explore the possibilities of this cuisine using her creativity as an artist. Like Chantal, Day had a difficult relationship with food for many years. It was through research into the nutrition of animal free food that Day learnt the possibilities of food to support a vibrant life. She teaches others to heal their relationship with food in her book, Love.Food.
“I had this huge, difficult journey with food and I came through the other side of it understanding what food actually is. I can now make informed choices and be really excited about cooking and food. Discovering how to feed myself properly was something I wanted to give to other people.”
